Following a comprehensive review of the Plant-Based Universities motion (passed by Union Council) in conjunction with the commercial and operational impact of a transition to 100% plant-based catering, the ICU Board of Trustees has approved a number of recommendations.

These set out a measured, data-driven approach to increasing plant-based options while ensuring the Union's overall financial sustainability and student satisfaction.

As part of our commitment to sustainable and responsible change, ICU will now begin implementing the following key actions:

  • Increasing plant-based and vegetarian menu options from 39% to 50% by the 2025/26 academic year.
  • Introducing Klimato Sustainable Food Solutions in 2025/26, which will provide transparent carbon footprint labelling on all menu items to help inform student choices and encourage gradual shifts towards more sustainable food consumption.
  • Continuing to assess operational feasibility, including capital investment needs, staff requirements, and demand trends - recognising that any move towards a fully plant-based offering would only be fully considered if clearly supported by student demand and operational viability.

We recognise the importance of providing high-quality, nutritious, and appealing food options for all students while ensuring that any transition remains financially feasible and reflective of student demand. Therefore, a full review of the Plant-Based Universities proposal will take place in March 2026 to assess the progress of our initiatives, review updated data, and determine the next steps.
